The larger of the two Tourelle ovens, the 75 (29.5 in) is a vaulted cavity installed at eye level, with the oven design and cooking performance of the Château line. Like that line, it is hand-assembled in La Cornue’s Saint-Ouen l’Aumône workshop. It is usually set into tall cabinetry, beside or above a separate cooktop.
Controls are mechanical, with no display and no codes. We put a thermometer in the cavity and compare it with the thermostat setting, to see whether the oven reaches temperature and holds it. If browning is uneven from front to back, the thermostat and the vault airflow are the places we look. The door seal is checked for stiffness, and the door for a flush close.
The label shows which size you have, which is why we read model and serial before ordering parts. A written price comes before work starts.

The oven will not reach the temperature I set. What do we check?
We measure the cavity with a thermometer against the dial, then test the heat source and the thermostat. A gap between the setting and the reading tells us which one to look at.
Why does the label matter on a built-in oven?
There are two Tourelle sizes, 60 cm and 75 cm. The label confirms which one you have and its serial number, so we order the correct parts and nothing has to be returned.
Is a worn door seal worth replacing?
If it has hardened or the door no longer closes flush, heat escapes and temperatures drift. We inspect the seal and door fit and give you a written price before replacing anything.
